Oleic acid

 

Oleic acid is a fatty acid isolated from the olive. The double bond in oleic acid and most natural fatty acids are beautifully defined as cis form. The corresponding trans isomer of oleic acid (elaidic acid) is solid. In contrast, oleic acid is liquid, comprising 3/4 of olive oil. A tiny change in the structure alters the property of the molecule as well as its function in our life.
